Mì Quảng (also spelled mỳ Quảng), (literally: Quảng style noodle) is a Vietnamese noodle dish that originated from the provinces of Quang Nam and Da Nang, in central Vietnam, however it is believed that Mì Quảng came from the imperial-era port town of Hoi An. In the region, it's one of the most popular and nationally recognized food item, and served in various occasions such as family party, death anniversary, and Tết. Mì Quảng can also be found in many restaurants around the country, and a popular lunch item.

Originally the dish is most often made from wide rice noodles called lá mì and the yellow kind of lá mì are egg noodles. These noodles are typically made at home. The noodles are cooked and served with seasoned pork chop or chicken, hard-boiled egg, sauteed shrimp, peanuts, chả (Vietnamese steamed pork sausage), chili pepper, fresh vegetables including: water mint (rau húng lủi), basil, Ipomoea aquatica, Vietnamese coriander, sliced banana flower (bắp chuối bào), and lettuce), and pieces of crispy bánh tráng (crispy version of rice paper, that's also used for Goi Cuon. Ingredients may vary, but peanuts and bánh tráng are most commonly found in Mì Quảng and make the dish unique amongst other noodle dishes.

The main ingredients of the dish are noodles, meat and vegetables. Vegetables are placed atop of a bed of rice noodles in a bowl, then topped with pork, shrimp and finally hot broth made from pork & pork bone (sometimes chicken broth instead) is added. Unlike other famous dishes such as Bún Bò Huế in Huế or Phở in Ha Noi which are soupy and contain a lot of soup broth, only enough broth is added to moisten the noodles. Mì Quảng is also served with bánh đa, herbs like sliced shallots and green onion, lime, and sliced chili. There's 2 varieties of Mì Quảng, Chicken Mì Quảng and Pork Mì Quảng.

There is a Vietnamese saying about this dish:

This couplet describes a girl from Quảng Nam, a province on Vietnam's South Central Coast, who warmly invites her lover to drink a cup of tea and a bowl of mì Quảng, to show him the depth of her love for him. In her opinion, mì Quảng and tea are food and drink worthy of being served in this context.
