Oreilles de crisse is a traditional Quebec dish consisting of deep-fried smoked pork jowls. It is generally served at cabanes à sucre (sugar shacks) in spring time, traditionally topped with maple syrup.
The word crisse is the Quebec French profanity word for "Christ". The name of the dish thus literally translates to "Christ's ears".
