Confusing pronoun use of "it"[edit]

The following text uses "it" in a way I couldn't follow. Which apple is "it" referring to? I assumed "it" was "Cortland", but it didn't make sense when "it" referred to a sweet apple… Cortlands are tart; MacIntosh are sweet. Maybe "it" is the "Ben Davis" mentioned earlier in the paragraph?

Its flavor is sweet compared to McIntosh, and it has…

Also, in addition to

is an excellent dessert apple

you might add ", for example, in apple pies." (I will personally attest to their excellent use in pies!  ;-)
