Field hockey at the 2007 Pan American Games took place at the Field Hockey Centre at the Círculo Militar Deodoro. The field was adapted from a football field specially for the Games.

Argentina was the reigning Pan American Games champion in the men's competition, defeating Canada in the final in Santo Domingo, 1–0. The women's team from Argentina was the women's defending champion. They beat the United States 3–1 at the final.

Each competition had eight teams divided into two pools. In each pool, each team played against all others once and the two best advanced to the Semi-finals. The two latter in each pool played in fifth to eighth classification matches. The women's competition started on July 15, with the final on July 24. The men's competition began on July 16, with the final on July 25.
