Israeli eggplant salad or salat ḥatzilim b'mayonnaise is an Israeli eggplant salad, unlike the well known baba ghanoush it is made with mayonnaise that gives the salad a different taste. It contains fried eggplant, mayonnaise and garlic. In more recent times, the use of mayonnaise is less common while the tahini version is more popular, also other variations includes eggplant with yogurt or labneh.
