Summary

Description A typical setup for making pupusas in Olocuilta, El Salvador. Table (L) has the masa (dough), with plastic bowls of cheese, ground pork rinds (chicharrón), loroco, and refried beans (frijoles). All raw ingredients are covered with a towel to keep flies out of them. Pupusas are cooking on the griddle (plancha). Metal bowl on the left side of the plancha (griddle) has oil, since one must put a little oil on the hands so that the rice flour pupusas don't stick to the hands or griddle. Already cooked pupusas are towards the front (closer to the camera), and a few ready made are wrapped in aluminum foil on the far side, barely visible behind the pots. The pots contain coffee and hot chocolate.
