Is a dessert wine also a wine? Obviously it is, and so this is a subcat of Category:Wines. This needs no knowledge whatever of wine. "Vin Santo (holy wine) is an Italian dessert wine." It accordingly goes in Category:Italian wines, Category:Dessert wines (and possibly other categories). If Vin Santo is not in fact an Italian dessert wine, but a grape or a region, or a type of cheese, then the article is in need of a drastic rewrite. (Welschriesling on the other hand is not a wine but a grape, according to the article, and is thus wrongly categorised as a dessert wine and should be removed; it could be correctly categorised under Category:Dessert wine (as it is related to dessert wine) and is correctly categorised otherwise (IMHO)). Occuli...please pay attention! I would assume you have the best interest of the encyclopedia at heart so what is it, beyond pride, that causes you to blatantly ignore the fact that you are categorizing wine articles like someone who obviously doesn't know anything about wine. I can understand making such a mistake once, but you have been REPEATEDLY corrected and enlighten on your errors. People have taken the time to tell you what is the difference between individual specific wines and the other categories. Why do you constantly ignore when people make the good faith effort to correct you? The good faith effort to help give you the knowledge you need in order to make better categorization decisions that help the encyclopedia?
Admittedly, my patience is getting exhausted but I will try once again. The Category:Italian wines (and Category:Wines) are for individual specific wines. They are "list cats". A dessert wine is a wine style. It is a broad categorization of a a style of wine. You do know the difference between broad and specific right? I hope so. Now some examples of the individual specific wines that would be appropriate for Category:Italian wines (and Category:Wines would be...
These above are individual specific wines. These are like individual specific operas such as L'abandon d'Ariane, The Flying Dutchman (opera), Lady Macbeth of the Mtsensk District (opera), Nabucco and La traviata which would be categorized under Category:Operas. Each of those individual operas are not the same as opera genres. Please tell me you can see the difference between individual specific operas and broad categorization of opera genres? If so, can you at least see the difference between individual specific wines and broad wine styles? Does this now finally make sense or will you continue to willful ignore how wrong you are being?
