How about pectin? As a complex heteropolysacchride, perhaps it should be in a new hereropolysacchride section? I'm not very knowledgeable in chemistry, but it does seem like pectin should be in here somewhere. Pro crast in a tor (talk) 20:03, 7 April 2009 (UTC)
is fructose a reducing sugar?

- Ketoses can isomerize via tautomeric shift, allowing the carbonyl to migrate along the chain. As a result, they can be converted into aldoses. And the same conditions for qualitative analysis that one uses to test for reducing sugars are the ones that can easily promote this isomerization. See  for specific info about fructose and others.
