Eugène Aimé Salon, a very devout champagne connoisseur, set out to create a champagne that would fit his very lofty expectations. Monsieur Salon was very fond of the contributions that the chardonnay grape made to the wines that he enjoyed, but considered other varietals present in champagne to be a damper on the finesse, flavor, and texture of the wine. Monsieur Salon was particularly interested in a chardonnays of a very specific terroir, Le Mesnil sur Oger, a small village in the côte des blanc region of Champagne. Salon purchased parcels of land in this region that he had considered to be producing the finest grapes, and, in 1905, the first ever Champagne to be created strictly with chardonnay was produced. The wine, which was made only to be enjoyed by it's creator and his close friends, quickly gained notoriety. Soon, although Salon had not intended to turn a profit on his endeavors, individuals that had tried the wine, or even had heard of it were anxious to purchase a bottle. In 1920, thanks to the pressure of Monsier Salon's friends, Maison Salon was finally registered as a commercial champagne house. The resulting product was Champagne Salon Le Mesnil, blanc de blanc.

Tradition Of Champagne Salon

Upon creating his small Champagne Maison, Eugène Aimé Salon created guidelines for wine production that exist at the company to this day. Champagne Salon can only be produced on years that show a very exceptional harvest. Champagne Salon must be made with only chardonnay (blanc de blanc), it must be made of only grapes from the Maison Salon property. The grapes used in Champagne Salon are harvested and sorted by hand. The first pressing, or tête de cuvée is the only one used. Initial fermentation occurs in stainless steel with no malo-lactic fermentation. The wine is then aged in the bottle for 8-12 years prior to manual disgorgement.

Production of Champagne Salon is very limited, with between 6,000 and 10,000 cases produced in year it is made. The most recent vintage of Champagne Salon is the 1996, the house's 37th release; it is certainly among the most rare champagnes produced.

Vintage 1996

The Champagne Salon Le Mesnil 1996 is certainly a wine to behold. Like all Salon releases, it is the celebration of a wonderful harvest, and according to Salon Director Didier Depond, the 1996 is a pinnacle for Champagne. With a delicate bouquet and extraordinary freshness, this new vintage, with it's wonderful, effervescent backbone, is being compared to the legendary 1928, considered by many to be the finest vintage in champagne history. Champagne Salon ages gracefully, and it is known to fully mature roughly 10 years after bottling (20 years after vintage total), so it may be wise to cellar this wine for a decade or so.
