A sanitary fair was a fund raising event put on by a community and the local aid society or commission branch for the benefit of the soldiers. Money raised was given to the United States Sanitary Commission to purchase items like medicine and food which couldn't be procured via donations.

We have a great Yahoo! Group at http://groups.yahoo.com/group/ussanitarycommission/ where people interested in the U.S. Sanitary Commission (primarily reenactors and living historians) share information. There are extensive links there to primary sources as well as photos of original items and some reenactment photos.
