Tip (Gratuity)

Mexico Tipping is common and part of Mexico's culture and it is normal to tip 15%-20% before tax is added to the bill. This makes up a majority of the server's income. Gratuity may be added to the bill in some restaurants and is referred to as a propina. If the propina is added, there is no need to add more.
Central America Tipping is part of the Central American culture and if there is not a 10% gratuity added already, then you should tip 10%.
The Caribbean
Tipping varies from island to island on the Caribbean. In the Dominican Republic, restaurants add a 10% gratuity and it is customary to tip an extra 10%. In St. Barths, it is expected that you tip 10% to 15% if gratuity isn't already included.
