Just Mayo is a mayonnaise produced by Hampton Creek, Inc.[1] It is a full-fat, expeller-pressed canola oil mayonnaise, verified by the Non-GMO Project.[2] Just Mayo does not contain eggs.[3] Just Mayo was first released in Northern California Whole Foods Markets on September 19, 2013..[4]

History

Just Mayo's formula took approximately two years to create.[5] The research and development team at Hampton Creek screened 1,500 plants before discovering eleven that were suitable for the emulsification purposes in a mayonnaise.[6][7] The plant that replaces the egg in Just Mayo is a specific variety of the Canadian yellow pea (a type of split pea).[8]

Andrew Zimmern, host of the television show Bizarre Foods, has said of its flavor, "This product is a stunner."[6] Food writer, Ruth Reichl, said of it: "It's very delicious mayonnaise."[9]

It has been reported that Hampton Creek has signed deals with 6 other Fortune 500 companies and will be rolling Just Mayo out in them within the next couple of months.[10]

Production and distribution

In October 2013, Just Mayo is produced by a copacker located in Seattle and Tennessee[citation needed] and distributed to Whole Foods across the United States by distribution company United Natural Foods.[11]
