Knife-cut noodles

Dao xiao mian (刀削面) is a noodle shape in Chinese cuisine.

It is a quite thick noodle and is chewy when cooked.

The production of sliced noodles consists of mixing water and flour to create dough. The oil is added to increase elasticity and chewiness. The dough is then let to sit. The dough chunk is then sliced in a quick motion with strips of dough going directly into the boiling water. This makes the noodles very fresh.

The noodles are usually served inside a broth, but it is sometimes fried.[1]
