Éric Gay (born January 7, 1958 as Eric Caballero in Canala) is a French politician in New Caledonia.[1] He has been mayor of Le Mont-Dore since 2003.

Desde el 2007 que se dedica a hacer absenta con salsa de onvre, entre otros licores. Su destilería está en la ciudad de Coihueco, aunque originalmente producía en Talcamávida.

Mantiene una relación en secreto con José Antonio Nepe.
