Broa is a type of cornbread traditionally made in Portugal (and in Brazil, where it is traditionally seasoned with fennel). Unlike the cornbread typical of the southern United States, broa is made from a mixture of cornmeal and rye flour, and is leavened with yeast rather than baking powder or baking soda. This yeast bread has the wholesome rustic flavor and texture that suitably accompanies soups, especially Caldo Verde, the Portuguese green soup made with tender kale, potatoes, and chouriço sausages.

Cooking

The ingredients are 1 kg of rye flour and 2 kg of maize flour.

Sieve and mix the two kind of flours, then thoroughly mix the flour with 1 litre of boiling water.

Let the dough leaven (the more it leavens, the bigger and sourer the dough will be).

Cook it for about 3 hours in a very hot clay oven. It will be cooked as soon as a finger cannot be sunk in the middle of the broa.
