Too much yeast[edit]

In bread making is there a term for dough that has been allowed to rise / proof too long to the point that the yeast has used up all the nutrients in the dough and it starts to deflate? Is there any use for such dough? 182.253.139.17 (talk) 07:37, 21 November 2017 (UTC)[reply]

It's called "over proofing", or sometimes "over proving", but it doesn't happen because the nutrients are used up, it happens because the holes become so large that they connect to each other and allow the gas to escape, as well as breaking down the gluten structure by stretching it too far.
