Chicago-style relish is a type of sweet pickle relish typically used on Chicago-style hot dogs. The unique color, often referred to as neon relish, is created by adding blue dye to regular pickle relish[1]. The topping was first offered by Fluky's, a Chicago restaurant chain, in the 1970's[2].
