I know that the chemistry of coordination compounds cannot be simplied to be shown in a very general way, but if there is any relationship between coordination of the metal ion with the water of crystalization, it should be mentioned here. Sugar?

Not really. The steam that you see arises (I am guessing) from the chemical degradation of sugar. The idea of the water of crystallization is water that kind of gets trapped in the crystal, not occluded like a bubble but fits in between molecules (or more commonly ions). Compounds that lose water of crystallization can be reconstituted whereas water evaporated in thermal chemical degradation is usually lost forever.--Smokefoot (talk) 22:51, 27 May 2012 (UTC)[reply]
