He began his recording career circa 1938-1939 playing for Stratos Pagioumtzis. His career took off once the recording sudios reopend after the second world war recording the popular "Pasatempos" with separate covers by Roza Eskinazi and Ioanna Georgakopoulou.
He has composed many great songs that have become timeless, to name a few: "O Pasatémpos" (Ο Πασατέμπος), "Apópse Fíla me" (Απόψε Φίλα με), "Miázis san Thálassa" (Μοιάζεις σαν Θάλασσα), "Pollés Forés" (Πολλές Φορές). In his compositions the bouzouki has a dominant role and Chiotis is known to have been an incredible virtuoso of this characteristic Greek instrument.

Manolis Chiotis (Greek: Μανώλης Χιώτης) was a famous Greek Rebetiko composer, singer and bouzouki player.
