Carol Kicinski is a gluten-free advocate, TV chef, magazine founder & editor-in-chief, cookbook author, and food writer. She is the founder of Simply Gluten Free Omnimedia, Inc. Kicinski is also the founder and editor-in-chief of Simply Gluten Free magazine.[1] She is in her fourth season with monthly episodes as a gluten-free TV chef on Daytime, a nationally syndicated morning TV show produced by NBC-based WFLA-Tampa Bay.

Kicinski has been gluten-free for more than 20 years. She has written three cookbooks and her recipes have been published in many newspapers and magazines across the country.[2] [3]

Kicinski gathered gluten and allergen-free writers as well as medical doctors and professionals and created a lifestyle magazine. The magazine is distributed nationally and in Canada through Ingram Content Group.[4]

Television

In 2009, Kicinski started doing television cooking segments on the NBC-based WFLA-Tampa Bay's Daytime TV show, and is now in her fourth season. The show is nationally syndicated to 140 cities, including Tampa, New York, Los Angeles and Chicago,[5] reaching 80 million households monthly.

Writings

Kicinski has authored a number of cookbooks including Simply Gluten Free Desserts (2011),[6] Simply Gluten Free Quick Meals (2012),[7] [8][9] and Simply Gluten Free Cupcakes (2013).

She has also authored 10 eBooks.[10] [11] She has contributed recipes to The Cooking Light Gluten-Free Cookbook. Kicinski was a monthly recipe contributor to Martha Stewart's Whole Living from 2011 to 2013.

Blog

Kicinski's ventures have launched from her blog, Simply Gluten Free. She started the blog in 2007[12] as a way to share recipes with friends and family. The purpose of the website is to educate, entertain, and inspire those with celiac disease or sensitivity to gluten and other food allergens to live a healthier lifestyle for themselves and their families.

In 2010 Carol started the Gluten-free Global Community – putting more than 340 gluten-free bloggers worldwide in communication with each other. Then in 2012 she started the Celiac Support Groups Community with more than 280 groups represented worldwide.

Recipes

Carol Kicinski began developing gluten-free recipes for herself and her family more than 20 years ago when she learned she was gluten intolerant. She now does recipe development for gluten-free companies.[13] [14]

Kicinski also developed her own gluten-free all-purpose flour blend called Carol's Gluten Free Amazing All-Purpose Flour.

Advocacy

Carol Kicinski attends conventions, expos, events and celiac group meetings to speak about gluten-free living. She was the featured speaker at the Gluten-Free and Allergen-Free EXPO in Chicago in April 2011 and also in Dallas in August 2011. She was an educational speaker at the Southeast Natural Products Expo in December 2012.[15] She was a featured speaker at the Gluten & Allergen Free Wellness Event in Charlotte, NC in April 2013,[16] in Atlanta, GA in May 2013,[17] and in Raleigh, NC in August 2013.[18]

She has also spoke at libraries in her community, such as Dunedin Public Library and Clearwater Public Library.

Personal Life

Carol Kicinski lives in Florida with her husband. They have two sons.
