Candida humilis is a species of yeast in the genus Candida. It is used in the production of sourdough bread along with different species of lactic acid bacteria (e.g., Lactobacillus fermentum, Lactobacillus paralimentarius, Lactobacillus plantarum, and Lactobacillus sanfranciscensis).[3][4]
