(Dalpuri is a traditional Bengali breakfast bread as well as a popular evening snack. It is a bread that comes from Priyanjana’s hometown Kolkata.)
Yield: 8 dalpuris
Flour 400 grams
Oil 400 millilitres
Chana dal 100 grams
Turmeric 2 grams
Red chilli powder 10 grams
Salt To taste
Sugar 5 grams
Water 200 millilitres
Method:
• Mix flour, sugar, salt, water and 2tbsp oil together.
• Knead into a smooth dough.
• Rest dough for 20 minutes.
• Boil chana dal for 15 minutes.
• Prepare a semi-dry mixture with chana dal, salt, sugar, turmeric and red chilli powder in the food processor.
• Form 8 small balls with the stuffing.
• Divide dough into 8 balls as well.
• Flatten the balls a little and stuff it with chana dal mixture.
• Roll out into round disks.
• Deep fry the dalpuri in hot oil.
• Serve hot with Aloo Chhechki and Ginger pickle.
