Sipsmith is a microdistillery located in London. It is the first copper-pot distillery to open in London in nearly two centuries.

History

Sipsmith was established in London in 2009; it is the first copper-pot based distillery to start up in London in 189 years.[1] The Beefeater Distillery was the last to launch before this in 1820 and is the only distillery from the 1800s that remains in London, based in Kennington.

Sipsmith was launched by Sam Galsworthy and Fairfax Hall, respectively former Fuller’s and Diageo employees. Jared Brown is Sipsmith’s master distiller. He is a historian of drink and director of Exposition Universelle des Vins et Spiritueux.[2] In the past he developed spirits in Sweden, Norway, Vietnam, and in the US.[3]

The Sipsmith distillery is based on a residential street in West London on the site of a former microbrewery, later the offices of beer hunter Michael Jackson. [4] Their still was made by the German still manufacturers Christian Carl. The copper pot still has a capacity of 300 litres (66 imp gal; 79 US gal) and is called Prudence.[5]

Products

Sipsmith's first two spirits are a Barley Vodka and a London Dry Gin.[4] They are produced in small batches of between 120-160 bottles a time, from an English Barley mash that is created off-site.[5] Each batch is made in a traditional manner with three cuts: The initial alcohol or Heads (foreshots) which is discarded, the core or Heart of the distillation run which is retained and the final alcohol or Tails (feints) which is discarded. The retained Heart alcohol is then blended down to bottling strength with Lydwell Spring water, one of the sources of the river Thames in the Cotswolds.[4][6]

Sipsmith London Dry Gin is 41.6% ABV. It uses 10 botanicals: Juniper berries, Coriander Seed, Angelica Root, Liquorice Root, Orris Root, Ground Almond, Cassia Bark, Cinnamon, Orange Peel and Lemon Peel.

Sipsmith Barley Vodka is 40% ABV. It is unfiltered and unsugared.[3]
