I'd suggest you start with a definition. eg "Amphipathic lipids are molecules that have both hydrophobic and hydrophilic parts..." Or some such. Then get more specific

As far as I know, the majority of lipids are amphipathic (on the lipids article it defines them as amphipathic molecules), so it may also be helpful to mention a few lipids here that are *not* amphipathic. Kmcallenberg (talk) 16:26, 13 January 2012 (UTC)[reply]
