Who inherited the Latin Empire by descent after the death of James of Baux in 1383? (James left his claims by testament to Louis I of Naples.)

He was the last heir of the body of Catherine II of Valois, Princess of Achaea, his grandmother. Catherine had a younger sister, Joan of Valois (1304-1363). Joan's eldest son, John of Artois, Count of Eu, was living in 1383.
