Almagro, a historical town in the province of Ciudad Real in La Mancha, gives its name to Spanish Pickle. These use a variety from the district of Campo de Calatrava, with small fruits and with the leaves of the calyx almost covering the fruit. These are the unripe fruits of certain plants, preserved in vinegar. Species grown for pickling include gherkins, onions, red and green bell peppers, sweet corn, olives. carrot, and capers.
