What Wikipedia should be (and more generally what an encyclopedia should be) is a big debate in the Wikipedia community.
They're users who want to focus only on 'traditional' encyclopedic knowledge (history, literature, sciences, etc.), users who want any topic to be admissible, and every opinion in the middle.
So, while you would like we accept more topics, some would like we'd accept less!
The balanced choices the community make is to allow virtually any article meeting some core principles (what you seem to refer by our high stan). To my mind, the most important are:
- the information has to be verifiable (==> it exists sources, like news articles or publications about the subject)
- the information should be neutral and objective
You'll find more information about what is admissible or not on Wikipedia:Notability and on Category:Wikipedia notability guidelines pages.
