Because the table you changed to, Template:Officeholder table, introduces an additional layer of complexity for new editors without any corresponding benefits that I can discern. (It would be different if you were the first one to introduce a table but the table had been perfectly adequate for many months before you changed it.)
More importantly, as far as I can tell, there is no provision for using relative image sizes in this template - and that alone is reason to deprecate its use: WP:IMGDD states "Don't set fixed image sizes".
Also, and as you yourself already realize, using that template is antagonistic towards the visually impaired - not least because it makes no provision for alt image text. --BushelCandle (talk) 16:10, 23 June 2019 (UTC)[reply]
