Chicken Adobo is a Filipino dish. It is a marinated braised chicken stewed with vinegar, soy sauce, peppercorns, bay leaves and garlic. The word adobo comes from the Spanish word "adobar" which means "to marinate or pickle." The dish was first recorded in the year 1613 by Pedro de San Buenaventura.
INGREDIENTS:
2 lbs. chicken sliced into serving size
1 head crushed garlic
6 tbsp. soy sauce
6 tbsp. vinegar
1/2 tsp. whole peppercorn
3 pcs dried bay leaves
1/2 cup water
1 tsp. sugar
4 tbsp. cooking oil
PROCEDURE:
- Combine chicken, garlic, whole peppercorn, dried bay leaves, soy sauce, vinegar and water in a pot. Stir well.
- Cover the pot and cook for 10 minutes.
- Turn the chicken over and cook the opposite side for another 10 minutes.
- Pan fry the chicken for 1 minute per side. Pour the adobo sauce into the pan. Boil until it reduces to half.
- Serve with warm rice.
