Francis Mallmann (born 1956) is an Argentine celebrity chef, author, and restaurateur who specializes in Argentine, and especially Patagonian cuisine, with a focus on various Patagonian methods of barbecuing food. He has been featured on numerous international television programmes, as well as on the Netflix original series Chef's Table .
Biography
Francis Mallmann was born in Acassuso, Buenos Aires Province in 1956. In 1958, he moved to Bariloche in Patagonia when his father, Carlos Mallmann, was employed as the head of the Balseiro Institute. It was there that, in 1970, Mallmann started as a cook on a boat for tourists on Lake Nahuel Huapi.
At twenty, he began managing a restaurant with a partner. He then travelled to Paris, where he spent over two years learning alongside Paul Bocuse and other reputable chefs.
After returning to Argentina, he spent several years driving the kitchen of a fashionable restaurant. However, in 1983 he decided to open his own store on Honduras street in Palermo . It was open only at night and behind closed doors. During the day, Mallmann worked as a teacher.
During this time, he wrote his first book, La Cocina al instante, which was published in 1984.
He began working in television in the early 1980's. Between 1987 and 1996, the program was recorded in his restaurant and, in the summer months, in Punta del Este, excluding 1992, when the program was recorded at the Seville Expo, where Mallman was representing Argentina. His visibility in television significantly influenced the reach and scope of his work.
Popularity
In the 1990s, Mallmann's publicity led him to be associated with new ventures. However, he later chose to withdraw from these ventures to his spend time and efforts on his restaurants.
"It was hard to control what the actual sale of these products. They said they had sold 20 units but I knew that the sale had been of 100. Then I had to become a researcher, resorting to lawyers and everything. And I'm tired. "
Today, Mallmann runs several restaurants and catering services. He employs about 120 people total at all of the locations (in addition to his headquarters in Buenos Aires) which are located in Garzon and Jose Ignacio in Uruguay, Mendoza and La Boca in Argentina and Los Fuegos by Francis Mallmann in Miami, Florida, in the United States. The South Patagonia restaurant in Buenos Aires specializes in Argentine dishes, particularly meats from La Pampa.[1]
Most notably, Mallmann was featured in an episode of, Chef's Table, a Netflix original series, the particular episode focused on Mallman's life, and his cooking techniques. Francis Mallmann is especially known for his use of cooking techniques which are indigenous to Argentina, especially Patagonia, where he resides.
In November 2015, Francis Mallmann opened his first restaurant outside South America, Los Fuegos by Francis Mallmann in Miami, Florida at the Faena Hotel. The restaurant showcases Mallman's signature dishes and cooking techniques, and serves authentic Argentine cuisine. Mallmann was present at the grand opening, and visits the restaurant often.
Personal life
Mallmann is fluent in Spanish, French and English, and has six children from several different relationships. He resides in a remote region of Patagonia, near the border with Chile, where he trains his apprentices who he recruits from various restaurants around the world. He frequently travels the world.
