History
Freshii was founded by Matthew Corrin in Toronto, in 2005.[1] Originally called "Lettuce Eatery", the store opened to large queues and ran out of food on the first day before the end of lunch. Corrin's vision of fast, fresh food, custom-built, inspired Freshii's reputation for healthy, environmentally sustainable meals and snacks served quickly in a cool, clean setting for breakfast, lunch, dinner and snacks. In 2015, the company was opening 2 new stores per week and had reached a total of 160 stores in 13 countries. Rapid expansion has also been seen in Latin America, with Colombia serving as the base of operations. Chile is the up-and-coming big expansion, starting in 2015, where Freshii hopes to open from 13 to 20 restaurants over the next decade. Restaurants have also been opening in Mexico, Guatemala, Costa Rica and Panama. The Latin American locations all feature the same core menu as Freshii outlets in North America and Europe, but also add several local or domestic ingredients.
Concept
The concept behind Freshii is to offer a customisable eating experience. Customers choose from a wide selection of chef-designed items, or create their own salad, wrap, bowl or soup with over 70 fresh ingredients and dressings. The choice is indicated via a paper receipt, known as a "Fast Ticket", presented to the cashier. The order is then "designed", with the desired toppings and dressings.
Patrons who do not wish to design their meals from scratch choose a menu option, by which they substitute ingredients in and out of a menu choice. For example, one customer who makes a menu choice might substitute a vegetable broth for chicken broth.[citation needed]
Philanthropy
Freshii is an active supporter of many local organizations where they have operating locations. On a global level they support Free The Children where Freshii has developed their Green Bowl campaign where a customer can purchase the re-usable green bowl and some of the proceeds go directly to Free The Children. The program is a partnership where by the proceeds go directly to build school kitchens & vegetable gardens in developing countries.
