Casein/Milk a good example?[edit]

I am not sure if casein-stabilized milk globules is the best example for a Pickering emulsion, given that caseins are amphiphilic proteins which can undergo structural rearrangements upon adsorption at a fluid interface. RheoPirate (talk) 10:06, 26 July 2023 (UTC)[reply]
