La Ferme à Dédé is a restaurant that specializes in the traditional regional cuisine of Dauphinoise and Savoyard. The restaurant was founded in Grenoble, France in 2001. Today, it operates at 3 different locations, in the heart of Grenoble city center, near the station of Grenoble and near the vats of Sassenage. La Ferme à Dédé represents the cuisine dauphinoise that exists from the antiquity to the Middle Ages until the present day. The cuisine and the gastronomy of the restaurant originally belongs to these historical region. [1]
History
[edit]The first La Ferme à Dédé restaurant was opened in Grenoble city center in 2001 by the Di Caro family. It is a family business owned by three siblings which are Diego Di Caro, Jeannot Di Caro and Jacqueline Di Caro. The three of them were inspired to open up a restaurant that introduce the local specialties from the traditional French Dauphinoise and Savoyard. All the products are exceptionally from both regions. The restaurant took the name of the initial owner among the three siblings, Diego Di Caro as people call him by his nickname “Dédé”. The name then developed to become La Ferme à Dédé that symbolizes the regional tradition of Grenoble.[2]
Interior design
[edit]The interior design of La ferme à Dédé is a small and cozy family environment. The inventory were put together by the owning family themselves. The same style exists in all three restaurants. The main decoration is old wood, antique items and warm colors. The purpose of the inventory over all is to create a homey feel. The antique style is inspired by old French traditions, which goes hand-in-hand with the overall theme of the restaurant.
Gastronomy
[edit]La Ferme à Dédé wants to keep the taste of the traditional French cuisine which is why most of the food is inspired of the two French historical and cultural entities, the Savoie and the Dauphiné. We can observe the dolphin on the coat of arms that represents the family business which linked to the tradition and the gastronomy. All the dishes are composed with local products of the region, they are also part of the well doing of the French production. The dishes are generally oriented towards the mountain, in which we can find mainly cheese and a lot of hot dishes. The most famous dish is called "gratin dauphinoise“ which is composed with potatoes and cheese but everybody has the possibility to add everything that could improve the original recipe.[3]
Location
[edit]La Ferme à Dede has 3 different branches in Grenoble, France. They launched their first restaurant in the heart of city center where history and tradition reflects 18th and 19th century to our modern world. The journey to La Ferme à Dede starts from Victor Hugo and continues to small and narrow streets of Grenoble (Place aux arbres) that open a world of tradition and taste of past. Finally the walk ends up in the large area Rue Lafayette. La Ferme à Dede is located at 24, rue Barnave 38000. Tram A and B should be used to get there. Their second branch is located at Alsace Lorraine, which is 10 minutes walk away from the central station, La Gare, and in the middle of the historical and modern part of the city. Lastly, the third restaurant is located at Sassenage, which is 30 minutes away from Grenoble city center. You need to take tram A to Fontaine La Poya and from there, take the bus number 20 to reach to La Ferme Dede.
