I am a new contributor (as of March 2008) but a long-time fan.

A good salmon recipe follows:

  • 1-2 lbs of fresh king salmon
  • 1/4 cup chopped fresh basil
  • 1.5" piece of fresh ginger, sliced
  • a few cloves of garlic, alter to taste
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/2 cup canola oil (olive oil burns too easily)

Put everything except the salmon and basil into a food processor and pulse a few times to blend and mix. Add basil, mix well. Marinate salmon in this mixture for at least 3 hours in the refrigerator.

Barbecue salmon, basting occasionally. Invite friends.
