The Fuchun River shad }}</ref> The shad is one of the best fish in China. It is mainly in Yangzu river, and april in spring is the best season to catch it.^[1] Among all the shad fish in China, Zhengjiang and Fuchun River fish are the top 2. Shad fish is as white as shiny gay, and the meat is extremely delicious. At the beginning of Donghan, someone called Yan Guang（Ziling） from Yuyao, Zhejiang finally lived in Fuyang just because of the shad fish. Yan Guang was emperor Liu Xiu's classmate and had helped Liu Xiu became the king of China. After Liu Xiu established his kingdom, Yan Guang left and chose to stay in Fuyang. According to the history, Liu Xiu had ever invited him to go back to help him. However, Yan Guang refused the chance to be important politicizes. The reason is that he cannot give up the delicious Shad fish. This indicates that the shad is really a well-tasted food. Soon the fish became one of the dishes that were eaten by the emperor, and it was therefore become famous in the whole China. ^[2] Some famous poet had ever made some poetry to describe it, for example, Su Dongpo wrote that: Ya jiang zi cu chi ying yu, xue wan qing lai er chi yu, shang you tao hua chun qi zai, ci zhong feng wei sheng lu yu. Chang hen huang mei cui sheng xia, nan xun bai xue ji yang chun, wei qi shi yi wen wu zhui, yi jiu duan yi shi yan bin.(网得西施国色真，诗云南国有佳人。朝潮扑岸鳞浮玉，夜月寒光尾掉银。长恨黄梅催盛夏，难寻白雪继阳春，维其时矣文无赘，旨酒端宜式燕宾) The poetry indicated that the beauty of the shad is just as well as Xi Shi, one of the four best beautiful girl in Chinese history.^[3] Actually before, shad was sent to the king, it had already been famous because of its amazing shape and great taste. Whatever from ancient time to modern time, from China to foreign countries; Fushun shad fish all has a great fame for eating.^[4] Shad has been disappear in Fuchun River for years, and recently some people get the small shad fish back from the America, which points out that the shad may appear in Fuyang again when the time is mature.^[5] The reason why the shad called shad is that it is a special fish, which would go back to the same place every year at almost the same time. (Between spring and summer) Just like a person with clock, and in Chinese, “shi” means clock, therefore, it is called “shi yu” in China. It is extremely difficult to cultivate shad.^[6] The quality and temperature of water, the food and the nourishment are significant for shad, and in order for them to survive; all those conditions should reach a high quality. For example, the range of the temperature of the water cannot go below 2-3℃ or go above 33℃. On another aspect, these conditions are all similar to the water in Yangzi River. Thus shad fish is also called “Yangzi river fish”.^[7] Shad fish is grey, and it has red spots near the lip. Actually, when it matures, all the organs developed; there will be a red spot. Before it does not have red spots. While eating shad, the very first thing to do is to eat the fat. The fat is stored between fish scales and meat. Using chopsticks to stick it, all the fat will flow out. Very delicious! There is another legend said that once the fishing net touches the shad, it would not move rather than jumping like other fishes. Su Dongpo thought it is because shad loves her scales, so, shad is also called “Xi Ling fish”.Shad’s meat is delicious, and also nutritious, including protein, fat, calcium, phosphorus, iron, vitamin ect. ^[8]It could help people to build up a healthy body, and let one want to eat more. Shi yu is no only a beautiful fish but also a healthy food. Although it disappears for some years, one day it will appear again.
