Subject:Qingming GUO

== As we all known that China has many special festivals such as Spring Festival. Tomb Sweeping Festival, which also called Qingming Festival[1], is also counted as a traditional festival over China's five thousand years.Once Tomb Sweeping Festival is coming, people will go to climb the mountain to visit their ancestors who were already dead with thier whole family. After climbing the mountain or playing outside, a family's grandfather and grandmother will make a special food which called Qingming Guo[2]. Always, Qingming Guo looks like dumplings [3], but in green. Qingming Guo [4]looks really delicious and make people feel hungry when they look at these Qingming Guo. Let us enjoy Qingming Guo![5]

Similar to the Spring Festivals of other cultures, Tomb Sweeping Day celebrates the rebirth of nature, while marking the beginning of the planting season and other outdoor activities.Tomb Sweeping Day, which also called "Cold Food Day", is the day when folks sweep the ancestors' tombs and eat cold food. Qing Ming Jie was adjacent to Cold Food Day. So, later on they gradually became one festival, and thus "Cold Food" became another name for Qing Ming Dusting, also, the tomb and eating cold food turned into the customs of Qing Ming. Qing Ming has evolved into a culture-rich and meaning-deep remembrance day. [6]

No.1:First, we need to boil a cup of water, and put washed wormwood into the big cup, then you will see the white fluffy wormwood rolls and jumps in the cup with boiling water, very soon, it will turn into a fresh new green dough. Then, bailing wormwood out from the pot is very necessary and then rub it into small bolus, put some water into it, and blend the crumpled wormwood with rice flour, at the same time, adding in some oil and salt. It will result in a semi-dry dough. The dough looks like the surface of blue and white porcelain, while wormwood[7] is like the green pattern under the surface. When Preparing fillings, and the brown sugar is for sweet filling, pickled shoots with minced meat is for salty filling. The dough will separated into smaller pieces, just a slight press will turn it into a thin round cake at that time. Finally, put stuffing in the middle, and then a pinch and a press will turn it into a Qingming Guo.[8] No.2:First, we need to do some preparation. Cleaning the stone stamp mill is the first step, which is the old and typical tool of New Year Cake in rural area. Of course, if there do not have these kind of tool, iron pan and the wooden stick is also a good choice. Then, we can collect some fresh wormwood[9] in the farmland, and throw away the flower which is yellow and wash it by clean water. Use winepress or wooden stick to pound the fresh wormwood to pieces. Then, bring some glutinous rice flour to the table and put these mixture into the rice. Using your hands is a good vehicle to make such mixture into global shape. Pay attention this point, according to the mixture's dry and wet index to choose to put clean water into it. Keeping this kind of action until it is ok to stop. Knowing how to control the rock hammer is important during the process when you thump the mixture. About fifteen minutes later, the mixture will become whose flexibility is strong. Using such mixture whose flaxibility is really strong is difficult to become skin detection. Collect the fresh pomelo leaves and clean them, then cut the leaves into circular shape to be prepared. Then one of the most important step is coming which is to make the filling. Cut the pig pork into very small pecies and put them into a small bowl. Stamp breaking the groundnut and cook it. Also make the orange cake into little pecies. Then add suitable amount of sesame seed and brown sugar into the mixture and make it to be a uniform mixture. The next step is to make the real Qingming Guo. Choosing a pecie of glutinous rice flour and make it to be a globular thing. Use your thumb to make a pit bucket and put the filling into it in order. And use your hand to make the qingming guo become flat and add a fresh wormwood on the bottom. Putting all the Qingming Guo into the iron pan about 12 minutes , then change the big fire into small in two or three minutes. After doing that all process, the delicious Qingming Guo is finished.






Food

Like Spring Festival, Tomb Sweeping Festival also has many traditional food people need to eat. Qingming Guo is one of these traditional food that not only look green but also taste delicious. There is also some other food people enjoy to eat on Tomb Sweeping Festival. For example, Wuren Rice or Wuren Fan (乌稔饭)which looks like rice and in black , Runcai Bing (润菜饼) or Spring Roll (春卷)[10],Qingtuan (青团)[11]is something that looks like Qingming Guo but not the same, Zitui Mo or Zitui Bread (子推馍)is a memorial food for Jie Zitui (介子推), and eggs.[12]. All of these food looks delicious and always be ate in Southern China, which means that northern Chinese generally do not eat these kind of food on Tomb Sweeping Festival[13].

Material

There are two different method NO.1 Rice flour about 500 grams; glutinous rice flour about 1000 grams; Water about one hundred grams; Fresh wild wormwood about fifty grams; bamboo shoots in spring about two hundred and fifty grams;

Dried bean curd about  two hundred and fifty grams;

lean meat about two hundred and fifty grams; celery(smallage) about fifty grams; appropriate amount of oil; suitable amount of salt; some Chilli powder; a little chicken essence; NO.2 Rice flour about one thousand grams; Fresh pomelo leaves about thirty to forty pieces; Fresh wild wormwood about two hundred and fifty grams; Pig pork about one hundred and fifty grams; Fried peanut about fifty grams; brown sugar about two hundred grams; Orange cake (fruit) about one piece; Fried sesame about twenty five grams; chopped green onion about twenty five grams;
