Per MOS:SERIAL, the key to using serial, or Oxford, commas is consistency within the article. If you see them elsewhere in an article, feel free to apply them correctly in other locations. If you don't, adding them is not usually appropriate, even if it's the only one. You could always discuss the change on the article's talk page if you've been reverted. @FlightTime Phone:, you might want to review the MoS as well.
