Inhibition of polyphenol oxidases (PPO)
[edit]tl;dr: potassium dithionite probably inhibits PPO activity, but [citation needed]
This page and the polyphenol oxidase page both contained the unsourced claim that potassium dithionite inhibits the activity of polyphenol oxidases.
But, I could only find sources for this claim that mention sodium dithionite, so the PPO page now mentions that instead, and this page now just notes the similarity of these two.
I'm pretty sure the claim is true though (...like, who cares what metal the dithionite ion was bound to before you dissolved it in an organic mush?), which is why I'm leaving this note here.
