Millow is a Swedish company founded in 2020 that develops meat alternatives using a combination of mycelium and oats[1][2]. The company uses a dry fermentation process to produce meat alternatives that aim to replicate the texture and flavor of meat[3][4]. In November 2023, Millow received €2.5 million in funding and €15 million in direct investment from the European Innovation Council to support its growth[5][6]. The technology for Millow's products is based on research conducted by Professor Mohammad Jafar Taherzadeh at the University of Borås, focusing on the use of mycelium in food production[7][8].
