Barbecue cold noodles (Chinese: 烤冷面, pinyinkǎolěngmiàn) is a local specialized snack of Heilongjiang Province. It is a side dish, usually sold at night markets or roadside stands rather than in restaurants.

Barbecue cold noodles cooked by special cold noodles like pieces of paper, with eggs, onions and other auxiliary materials, The main condiment is sweet bean sauce or gochujang.

Traditionally, there are three ways to cook barbecue cold noodles, including barbecue, teppanyaki and fry.

History[edit]

There are two main idea of the birthplace of barbecue cold noodles, most people believed barbecue cold noodles born at Mishan and some people believe that barbecue cold noodles born at Mudanjiang.[1]

It is said a Korean man who sold snakes at the backdoor of Second Middle School of Mishan City, liked to barbecue some cold noodles for himself as a dish go with wine. Unexpectedly, students of Second Middle School of Mishan City found that barbecue cold noodles was very delicious, and barbecue cold noodles became very popular in Mishan.[1]

However, the ordinary cold noodles was not soft enough, so it was a little hard to chew. After people made soft noodles, barbecue cold noodles accepted by people all around China gradually. [1]

Viaration[edit]

  • Barbecue: Put cold noodles in a barbecue grilling basket after apply sauce on cold noodles.  
  • Fry: Fry the cold noodles and then brush sauce. Now, only Mishan use this way to cook barbecue cold noodles.
  • Teppanyaki: Teppanyaki cold noodles with onion, eggs and sausage. This is the most common way to cook barbecue cold noodles.

Chemical Analysis[edit]

People love barbecue cold noodles always because the barbecue cold noodle has chewy taste. The chewy taste of barbecue cold noodles comes from gluten. Gluten is a kind of elastic material, its molecular structure is more complex, it is a condensation polymer composited by more than 20 amino acid, the main component is non-polar gliadin and polar glutenin.[2]
