The Sweet and Sour Spare Ribs dish is a very popular type of dish from China. [1] [2] Pork is symbolic of prosperity and is a favorite dish served for Chinese New Year[3]. The Chinese also like to serve sweet and sour dishes as the word sour in Cantonese syun, sounds like grandchild, and portends the wish for offspring. It is a traditional and the most popular food[4] for Chinese people. The Sweet and Sour Spare Ribs is reddish in color, sweet and sour, and just a little salty. The origin of sweet and sour Spare Ribs was in 18th century Zhejiang or earlier. It originated in Wuxi City of Jiangsu Province and has been popular in Jiangsu,Zhejiang and Sichuan provinces. People always cook Sweet and Sour Spare Ribs at home. It had many ways to make it. The first way is that it used 500g Pork ribs [5], 1 Scallion, 1 pieces of Ginger, 2 cloves Garlic, and a lot of starch.The direction is that the first Step, people washed the pork ribs and chopped into small pieces. Then, take the Ginger and Garlic[6] washed and cut into pieces. Second Step is that washed the Scallion and cut it. Then, put the oil into the oil pan and heating up the oil. Third, put the pork ribs into the oil pan, let the pork ribs surface is become yellow. Then, need to add salt, Ginger, Garlic and Scallion. The Four Step is that after boiling, sprinkle sesame oil, and wet corn starch. The second way is that it used Pork spare ribs, Flour[7], Corn starch with water, Sugar and Vinegar.Direction: First Step, people should to cut the spare ribs into small pieces. Then, mix the cooking wine and salt together. Second, mixes the flour with the corn starch mixture, and put the pork pieces into a batter. Third Step is that make a sauce by mixing the cooking wine, sugar and vinegar. The four step is to heat oil in pan, then deep-fry the pork pieces twice. The Final Step, pour the sauce over the pork pieces, garnish with spring Onion.[8]The third way is that people used 5 to 6 pounds pork spareribs or pork loin back ribs, 1/2 cup sugar, 1/2 cup packed brown sugar,2 tablespoons cornstarch,1 cup ketchup,2/3 cup cider vinegar, and 1/2 cup cold water. Then, the direction is that place ribs on a rack in a large shallow roasting pan. Bake at 350° for 1-1/2 hours. Meanwhile, in a small saucepan, combine the sugar, brown sugar, cornstarch, ketchup[9], vinegar and water until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove ribs and rack from pan. Drain and discard fat. Return ribs to roasting pan; drizzle 1-1/2 cups sauce over ribs. Bake 30 minutes longer. Cut ribs into serving-size pieces; brush with remaining sauce. And the other way is that it used fresh pork chop, a bit of white sugar, table salt, Chinese vinegar, Chinese cooking wine, soy sauce[10] and onion. The First Step, fresh and chopped pock-chop. Then, people should to clean in tap-water. Next, deep-fry for a few minutes and then, get out the pork chop after they turn brown in oil. Five, stir the pork-chop with other spices. The Six Step is that put sugar, salt, vinegar, wine, soy sauce and onion, then stir them. The Final Step is that stir until being dry.However,not only the Sweet and Sour Spare Ribs is very popular in the china,but also it has been accepted by many foreign countries . Just like Australia, Europe, North America,CanadaSingapore [11],and so on .
