Stupid statement

"that the pink and black sea cucumber (pictured) is eaten as "bêche-de-mer" in China and Indonesia?"

That's a french name. How many chinese do you think know french ? A lot less than the number of chinese who know english. The chinese certainly do not "eat it as bêche-de-mer". In China it is "eaten as 海参"
