Creation of this article based on the translation of the latest, cleaned version of the French wikipedia source. The guy runs pastries and/or restaurants in France, the US, Japan, the NYT and various international media talk about him, he's recognized by his peers internationally, I think he qualifies for an english page.

Quote/ref mixup[edit]

In second paragraph of "Rise" the second ref is mixed up. The cited quote is actually found here in NYT article "Turning Baking Into Cooking" by AMANDA HESSER Published: August 30, 2000. Definitely not in any of the three pages of [https://www.nytimes.com/2000/08/30/dining/there-s-new-flavor-town-it-s-salt-dessert-traditions-go-over-shoulder.html "There's a New Flavor in Town and It's . . .
