Baker's Yeast and Multiple Citations

On October 18th, 2016 you edited the article Baker's yeast. Although I agree with the idea of swapping out primary references for secondary ones, the citations you deleted were free from Organic Syntheses whereas your source from Chemical Reviews costs $40 USD to read. Although your reference ought to be included into the article, I am of the opinion that it shouldn't supplant good, non-paywalled sources of information. Do you agree?
