Though sometimes served with similar accompaniments as bresaola, Carpaccio is not a dried product as all. It is just thinly sliced (or pounded) fresh raw meat. And although Carne de sol is cured in the sun, it is only for a brief period (a day or two). The final product is still cooked before serving. undo
