Use of image of "Oyster pebbles"

I am not sure about the use of the image of "Oyster pebbles". Does it need some explaining or justifying? From here http://cheesenbiscuits.blogspot.co.uk/2012/07/lenclume-cumbria.html (not a reliable source) there is this "supremely delicate apple meringue filled with oyster cream which dissolved into heavenly fresh seafood in the mouth, accompanied by extraordinary things called "oyster leaves" - look like weeds, taste like oyster."
