In over thirty years of eating New Mexican food, most of it in New Mexico, I have never, not once, encountered a restaurant that lists this dish as "carne adobada" on the menu. In my experience it is always spelled with a V, not a B. This is also the spelling used in every New Mexican cookbook we own. I gather from some of the earlier edits on this page that the spelling is almost a holy-war issue. Why?
