Quotation: "Since the sweet peppers used in Spain were not available in Peru, rocoto peppers were substituted" sounds as if the Spanish conquistadores knew stuffed bell peppers from their home and thus inspired the variants using rocotos instead of bell peppers. However, the bell pepper is a fairly late breed from eastern Europe, probably from Bulgaria, that dates to the late 19th century. And all species of capsicum stem ultimately from the American continent, they have been known there for a much longer time. So if the Spanish recipes of stuffed bell peppers indeed did inspire the rocoto relleno recipes, this must have been a very late influence. |
