Nationality of his dad and height

Why does this Wikipedia article state that his mother is Chinese and his father is White? Why do you not state the father's nationality? Or why don't you say his mother is Yellow and his father is (Scottish, or German, or French, Etc)? Why is it always okay to say White for Europeans, but not Yellow for Orientals? What's fair is fair.
