Ajapsandali (Georgian: აჯაფსანდალი), or ajapsandal[1] (Azerbaijani: əcəbsəndəl) is a traditional Azerbaijani, Georgian and Armenian dish, also popular in the Northern Caucasus. It consists of onion, eggplant, potato, tomato, bell pepper, parsley and other seasoning.[2]
